Hey everyone! So I was cooking tonight and thought this is one of those four out of five star recipes in our home that I am obsessed with! Why? Because it is a one pot meal! How can you not love a one pot meal, right? I got this recipe originally here. I have tweaked it a bit so I am going to write the quick and dirty of cooking this meal!
So the ingredient list:
1 lb chicken breast (chopped)
1 onion (diced)
3 cloves garlic (diced)
1 1/2 cups rice (uncooked)
2 cups chicken broth
1 tea cumin
1/2 tea salt
1/2 tea chili powder
2 cups salsa
1 cup corn
3 cups water
8 ounces black beans (rinsed and drained)
1 cup cheddar cheese (shredded)
1 avocado (diced)
Once everything is all ready to go it is really quite simple, start by cooking the chicken in olive oil. Add the onions and garlic to be cooked to translucent.
Once that is all cooked through, move it over to the side, and cook the rice in the liquid left over for a minute.
Next, add in the seasonings, chicken broth, salsa, corn, (and black beans if your whole family enjoys them!) My husband doesn’t like beans so I leave them out, and just put them on top of my personal dish at the end. Let this start to boil, then put it to low to simmer for 18 minutes.
Once this has cooked for the first bit, add in the water and finish cooking the rice, should take approximately 20 more minutes.
Lastly, sprinkle the cheese on top and let it melt. Serve up your bowl, and top with sour cream and avocado (and beans if previously left off.)
