Chicken with Yellow Pepper Sauce

Tim and I love a lot of different kinds of foods. This dish is Mediterranean inspired and was taken from this website. This dish was delicious and is definitely a five out of five in our home.

The recipe is as follows:

6 Chicken Breast, skinless, boneless
⅔ cup Roasted Red/Yellow Peppers, chopped
2 tsp Italian Seasoning, divided
4 Tbsp Oil
3 tsp Garlic, minced
½ tsp Salt
¼ tsp Black Pepper
1 cup Heavy Cream
2 Tbsp Feta Cheese, crumbled
Basil, thinly sliced

To make the roasted peppers, you take about 4-6 red/yellow peppers place them on a cookie sheet (you may want to line it with tinfoil.) Then roast the peppers at 450°F for 30-40 minutes, turn them every 10 minutes until they start to wrinkle and char. Remove them from the oven and let them cool. Once the peppers are cool, remove the stem, seeds and skins. Pour a few tablespoons of olive oil over the peppers flesh. Then when you are ready to make this dish you can have these babies ready to go! (They will stay good for up to 2 weeks once roasted.)- or you can go ahead and buy roasted peppers from the store.

Once I gather all the ingredients, I am ready to go. I start making rice in the rice cooker so it is ready to go when the rest of the dish is done. The chicken breasts are put into a pan and cooked through. The original recipe is a one pot recipe, but I definitely preferred to make this in two pans. The first to cook the chicken and the second to make the sauce.

Combine roasted red/yellow peppers, 1 teaspoon Italian seasoning, oil, garlic, salt, and pepper in a food processor. Pulse til smooth.

Once this sauce is ready, heat it through in a pan, while the chicken cooks the rest of the way.

I make a bed of rice, add the chicken breast, put the sauce on top and then finish it off with feta cheese and basil for a delicious dish! This dish is not only yummy but it is quick to make (the time to make rice and cook chicken through…so what 15-20 minutes?) I hope you try it and enjoy it as much as I did, especially if you have extra peppers from the garden, this was a great use!
